1 Tbsp olive oil
1 large green bell pepper, cut into chunks
1/3 cup onion, chopped
8 oz fresh mushrooms, thinly sliced
28 oz diced tomatoes, undrained
6 oz tomato paste
3 oz sliced pepperoni
1 1/2 tsps dried oregano leaves
1 tsp dried basil leaves
  salt and ground black pepper, to taste
16 oz Skinner®® Spaghetti
4 oz mozzarella cheese, shredded

Cooking Directions:

1.  Preheat oven to 350-degree F. 

2.  In large saucepan over medium heat, heat oil; add peppers, onion and mushrooms. Cook 5 minutes or until peppers and onion are tender, stirring occasionally.

3.  Add tomatoes with juice, tomato paste, pepperoni and seasonings; heat to boiling. Reduce heat and simmer 5 minutes. Add salt and pepper to taste.

4.  Meanwhile, prepare pasta according to package directions; drain. Toss hot pasta with sauce and pour into greased baking dish. Sprinkle with cheese.

5.  Cover and bake 30 minutes.
