2 each onion, chopped
2 large carrots, thinly sliced
2 each garlic cloves, minced
2 Tbsps olive oil
2 cans (28 oz.) crushed tomatoes
1 can (6 oz.) tomato paste
1 1/2 tsps sugar
1 tsp fresh oregano leaves
1/4 tsp salt
1/4 tsp ground black pepper
1/4 cup grated Parmesan cheese
16 oz Skinner®® Spaghetti

Cooking Directions:

1.  In a large skillet, sauté onions, carrots and garlic in olive oil over medium heat until tender but not browned.

2.  Add tomatoes, tomato paste, sugar and seasonings. Bring to a boil; reduce heat and simmer 20 minutes.

3.  Place sauce in food processor or blender and process until smooth. Stir in cheese.

4.  Prepare pasta according to package directions; drain.  Serve sauce over hot cooked pasta.
