Ingredients:

Skinner®® Spaghetti
1 Tbsp
olive oil
1 cup
dry white wine
1 medium
onion, thinly sliced
1 large
avocado
1 Tbsp
lemon juice
coarse salt, optional
freshly ground black pepper, to taste
1 Tbsp
finely grated lemon zest
Cooking Directions:
1. Prepare spaghetti according to package directions.
2. Meanwhile, in a large skillet, heat olive oil and wine. Add onions and simmer 15 to 20 minutes, or until golden.
3. Peel and pit avocado and add to blender with lemon juice. Puree until smooth. Season with salt and pepper, to taste.
4. In the skillet, mix onions, avocado sauce, lemon zest and cooked spaghetti. Season with additional salt and pepper, if needed. Serve immediately.
