Ingredients:

1 pkg Skinner® Texas Shape
1 can (15 1/2 oz.) black eyed peas, drained and rinsed
2 cups cherry tomatoes, quartered
red bell pepper, chopped
red onion, chopped
1/2 cup red wine vinegar
1/2 cup extra virgin olive oil
jalapeño peppers, seeded and chopped
1/4 cup fresh cilantro leaves, coarsely chopped
2 tsps sugar
2 tsps salt
1 tsp ground black pepper
garlic clove, minced

Cooking Directions:

Prepare pasta according to package directions.

 

In large non-reactive bowl, stir together all ingredients to combine. Cover and let stand for at least 2 hours or overnight.
