Ingredients:

8 oz Penne
1 cup ricotta cheese
1 each bunch broccolini, halved
1 piece lemon zest
2 Tbsps olive oil
2 Tbsps pine nuts, toasted
1 piece salt and ground black pepper, to taste

Cooking Directions:

1 - Cook penne according to package directions, keep warm and reserve 1/3 cup pasta water.
2 - Sauté or grill broccolini in olive oil until charred.
3 - Whip ricotta with lemon zest, salt, and splash of pasta water.
4 - Toss hot penne with ricotta and broccolini. Top with pine nuts.
5 - Serve and enjoy!
